My name is Simone Parri.
I’m a photographer.
I’m a cyclist.
I’m a non-fanatic, vegan gourmet.
I’m Italian. Born and raised.
But most of all, I’m passionate about the beauty of the nature, the changing of the seasons, the life, where I am in a symbiosis with nature: where what I eat depends on the work I put into my vegetable garden and the mercy of the weather, or where I end up with my bike.
This is how I live my life: the simple way of life. And this I am inspired to share.
Since I crossed Iceland in 2013 on my bike, I have worked on a cookbook, that combines the landscape photos from my journey, with those of how I prepared simple, nourishing and healthy vegan meals, with only a few ingredients at hand in a country with little to offer a vegan cyclist.
After my most recent adventure, biking the 4,000 km (2,485 miles) from Florence (Italy) to the North Cape (Norway), I have worked on a similar cookbook – this time a little more prepared on what to find and maybe not find on my way through foreign and very different countries – following the same philosophy regarding my food: To gain energy and strength cooking seasonal, nourishing and simple meals along the way.
Besides taking the viewer on an aesthetic photo journey, both cookbooks offer easy and authentic Italian recipes, here and there mixed with more innovative dishes depending on what I found.
When I am not biking, I live on my own in the mountains above the Tuscan village of Pistoia in a little farmhouse. Here I grow my own vegetables, I make my own olive oil and I prepare for my next adventure on wheels.
