Tasty and fragrant traditional Indian dish based on chickpeas flavored with curry combined with brown basmati rice, and then it has an excellent nutritional profile rich in proteins, fiber, vitamins and minerals, ideal to keep you energized and satiated for a long time.
The unmistakable scent of this dish is given by the curry and from the presence of a generous dose of garam masala.
First of all, rinse the rice in water. Light a fire. Take a saucepan and add the rice with the proportion of 1: 2 parts of water. Cook with the lid on over low heat until the water is absorbed.
Meanwhile, cut the onions into thin slices. Light another fire. Take a saucepan and pour a drizzle of extra virgin olive oil, rotate the pan to grease the bottom well. Add the garlic and crushed onions. Fry for a few minutes, stirring often until the onions soften. Add the tomato juice, curry and season with salt. Cook over low heat for about 10-15 minutes, stirring occasionally. Add the chickpeas (rinse and drain in the jar). Cook over medium heat for another 10 minutes until the sauce is thick and full-bodied. Season to taste, adding salt if necessary.
Pour in the garam masala and continue cooking for another 5-10 minutes, stirring often, but gently. Season with a drizzle of extra virgin olive oil.
