I rarely use dehydrated soy when I'm home. I consider the soy granules excellent to take with you due to the small size, to create various recipes and for its nutritional values. The soy granular is an extruded food based on soy flour, rich in vegetable proteins, vitamins and minerals, it is ideal for the preparation of vegetable sauces, excellent on bread for quick snacks and equally tasty on pasta.
First dehydrate the granulated soy, just soak it in a container full of water for 15 minutes.
Meanwhile, finely chop the garlic, onion and carrot. Light a fire. Take a saucepan and pour a drizzle of extra virgin olive oil. Add the onions and then the carrots. Fry for a few minutes, stirring often. Add the soy having first squeezed it well to remove the water, leave it to flavor for a few minutes, mixing and blending the ingredients.
Pour in the tomato pulp and adjust to taste by adding salt and pepper. Cook over medium heat with the lid on and stir from time to time until the sauce becomes thick and full-bodied. Serve on bread or as a sauce on pasta, adding a drizzle of extra virgin olive oil.
