Gado gado is an Indonesian dish made from a mix of vegetables with lemon and peanut sauce. The nutritional properties of this tasty dish are really numerous: the very caloric and magnesium rich peanuts (an important mineral for the muscles with energizing effect especially after a long ride), the cabbage with the health virtues rich in vitamins, mineral salts and antioxidant properties.

Wash the broccoli, cauliflower and Brussels sprouts and cut them into small pieces.
Light a fire. Add some water to a pot. Cook the vegetables over medium heat with the lid on until they turn bright green.
Meanwhile, make the sauce: Crush or better still blend the peanuts and garlic. In a bowl, add the extra virgin olive oil, lemon juice, a pinch of salt and the mixture of garlic and peanuts. Mix well until you reach a homogeneous emulsion, taste and season with salt.
Pour the mixture over the vegetables and mix well.
