The warmth and goodness of this soup will warm you up on cold days, beans and leeks the perfect combination, rich in nutrients with a delicate flavor.
First clean the leeks thoroughly to remove impurities and cut them finely. Ligth a fire and heat a saucepan. Put a drizzle of extra virgin olive oil and roll up the saucepan to grease the bottom. Add the garlic, leeks and cook over medium heat for about 10/15 minutes, stirring often.
Add the broth and pre-cooked beans (rinse and drain if in a jar) and mix gently.
Cover with the lid and cook for another 10 minutes to blend the flavors. Season with a drizzle of extra virgin olive oil, pepper and serve by adding toasted bread.
